I got this recipe from a friend some 25 years ago, while working at a photo lab in Boulder Colorado. It is still one of my go-to recipes for a simple elegant dessert. Got a half bottle of left over wine sitting around? Try these. Seriously. You won’t be disappointed.
Poached Pears in Wine
- 4 pears, peeled, halved and cored.
- 2 cups red wine
- 3/4 cup sugar
- 1 cinnamon stick
- 3 or 4 whole cloves
Bring all ingredients except pears to a boil in a 12″ skillet with a cover, stirring until sugar is dissolved. Add pears (you may need to shingle them into the pan), reduce heat to low, cover, and simmer until pears are tender, about 15 minutes. Gently remove pears to serving plates. Remove whole spices, turn heat up on wine sauce and boil until thickened and syrupy. Spoon syrup over pears. Drizzle with chocolate sauce and heavy cream if desired. Serve warm.
This recipe can be cut in half to serve fewer people. You can also mix up the spices. Try it with orange peel and cardamom. Or add some allspice and black peppercorns. There are endless possibilities.
